Dinner Tonight: Chicken Cheese Burgers

For all you girls out there that like to have dinner with your manfriends, but don't like to eat the same crap they're having, here's the perfect recipe for both of you.

This recipe for chicken cheese burgers is manfriend approved (my manfriend had three of these burgers in the past two days). This recipe is healthy, easy to make, and tastes great. It leaves plenty of room to add your own ingredients, substitutes and extras. Also, it's healthy and satisfying for you, but also hearty enough for your manfriend to enjoy. 

Here's what you'll need:
  • 1 pound of ground chicken (Purdue makes a healthy, lean and inexpensive ground chicken that you can find at pretty much any grocery store)
  • 1 cup of finely chopped/minced mushrooms
  • 1/2 cup of scallions
  • 3 egg whites
  • 1/3 cup of shredded cheese (I use Weight Watchers Mexican Blend Shredded Cheese, it tastes great and adds more flavor and little spice)
  • 2 tablespoons of Dijon mustard
  • Black pepper and crushed red pepper
  • 2 slices of bread (I use sandwich thins, they're only 100 calories, and they come in several different kinds)
  • Any other burger topping you like. I used a little more Dijon mustard, a few pieces of spinach, a few slices of tomato and red onion.
To Prep:

  • Preheat the oven to 375 degrees 
  • Cover your baking sheet with tin foil 
  • In a large mixing bowl, combine the ground chicken, mushrooms, scallions, egg whites, cheese, Dijon mustard and pepper. Mix everything with your hands, its easier.
  • Form 4 equal sized patties and place on the baking sheet 


Put them in the oven!
  • Once the oven is preheated, cook the burgers for 20 minutes, flip and cook for another 20 minutes. The juices should be running out of the burgers and your kitchen will smell so good. 
After about 40 minutes they'll be done
  • Take the burgers out of the oven, let cool for a few minutes. Place them on the bread of your choice, and top with whatever you like. Enjoy!

  1. These are delicious! I added chopped jalapeños into the mix, because I love the heat. I made them for myself the other night and put the rest in the fridge to have the next day. However, when I went to grab one, they were completely gone! I figured I wouldn't have an issue about my boyfriend eating them on me, because he is extremely picky and hardly ever tries new things. Definitely adding this into dinner rotation, thanks!
